How to taste it...
The egg tagliatella is characterized by a bronze drawing that gives it the right porosity and roughness and that retains the sauce and seasoning, while the slow drying at a low temperature, which can last up to 72 hours, guarantees al dente cooking and an excellent flavor.
For good cooking it is recommended to use at least 3l of water for 250g of pasta. Bring to a boil, add salt and dip the product, mix lightly. For cooking al dente 3 min, sauté in a pan for 2 min.
